Tomato Spinach Brown Rice Spaghetti


2- 398 mL cans of tomato sauce
(I use earthpure organic from costco)

1- 8 ounce container of grape tomatoes

2-3 cups of baby spinach

1 teaspoon of black ground pepper

1/4 teaspoon of red chilli flakes

1 teaspoon of italian seasoning

2 garlic cloves, minced or grated finely

1 teaspoon of extra virgin olive oil

One package of gluten-free spaghetti
(I prefer gogo quinoa, catelli, or rizopia)

Goats cheese to top

Make it

1. In a medium pot heat olive oil, garlic and chilli flakes on medium-low heat  stirring until fragrant. Add grape tomatoes and allow to saute for 1-2 minuted

2. Add tomato sauce, pepper, and italian seasoning stirring to combine. Turn heat to a low simmer and allow to simmer for at least 15 minutes (the longer you cook it the better the flavour) Add the spinach stirring into the sauce and cooking until it has wilted down.

3. Cook your pasta according to package directions, once done toss into the sauce

4. After plating sprinkle with some crumbled goats cheese


Overnight Oats

This recipe is a super easy, healthy and delicious way to start your day!


1/3 cup of pure gluten-free oats (I use only oats)

1 tablespoon of ground flax seed

1 tablespoon of chia seeds

1 teaspoon of ground cinnamon

1 banana

unsweetened almond milk

agave nectar or honey for drizzling

Make it:

Before bed in a container with a good fitting lid combine all of the ingredients above except the agave or honey, adding enough almond milk just to cover the dry ingredients, shake up and leave in the fridge over night.

In the morning warm up if desired in the microwave and add the honey or agave for added sweetness, a dollop of plain greek yogurt makes a nice addition as well!

Creamy Coffee Chia Seed Pudding


1 cup of unsweetened almond milk

1 cup of coffee flavoured greek yogurt
(I used Oikos brand, feel free to use vanilla or any other flavour yogurt you like) 

1 tablespoon of maple syrup 

1 teaspoon of pure vanilla extract 

pinch of sea salt 

1/4 cup of whole chia seeds 

Make It

1. Whisk together almond milk, greek yogurt, vanilla, and maple syrup in a medium sized bowl until well combined

2. Whisk  in chia seeds thoroughly until well blended and allow the mixture to stand for 30 minutes on the counter 

3. Then stir the pudding to ensure the chai seeds are evenly distributed and having clumped at the bottom of the bowl 

4. Cover and chill in the fridge overnight

5. Serve!
