Lemon Poppyseed Protein Muffins

Preheat oven to 375° F

Ingredients 

1-1/2 cups of Gluten-Free All Purpose Flour (I prefer bobs red mill)

1-1/2 teaspoons of gluten free baking soda

1/2 cup of ground pure, gluten free oats
(I use Only Oats brand)

1 scoop of Vanilla protein powder
(I use Vega Sport Recovery Vanilla, it is plant based, gluten free, dairy free and soy free)

1 tablespoon of poppy seeds

1/2 teaspoon of fine grain sea salt

2 lemons, zested and juiced

1 cup of coconut sugar (or another natural, unrefined sugar alternative)

1 cup of unsweetened almond milk

1/3 cup of coconut oil, melted

1 teaspoon of pure vanilla extract

Make it

 1. In a large bowl combine dry ingredients (flour, baking soda, salt, ground oats, protein powder, and poppy seeds) Stir to combine.

2. In a seperate bowl whisk together the wet ingredients (lemon juice, lemon zest, almond milk, almond milk, coconut oil and vanilla extract)

3. Stir the whisked wet ingredients into the dry, DO NOT OVER MIX! gluten free batters are made easily tough when over mixed, if the batter is a little lumpy this is fine.

4. Grease muffin tins with more coconut oil, and fill with the batter. Put into the preheated oven. Bake for 15-20 minutes or until a tooth pick comes out clean.

5. Allow to cool in the muffin pan for 5 minutes, then turn out onto a wire rack to fully cool.

Maple Glazed Salmon with Garlic Mashed Sweet Potatoes and Asparagus

Ingredients:

Atlantic Salmon Fillet

4 tablespoons of Butter or Coconut oil

1/3 cup of Pure Maple Syrup

1/4 teaspoon of Salt

1/4 teaspoon of Ground Black Pepper

Zest of one Lemon (finely grated), Reserve rest of lemon for the juice

2 Large Sweet Potatoes

1 Garlic Clove

1/2 cup of non-fat plain greek yogurt

1 bunch of Asparagus

Make it

Sweet Potatoes:

1. Peel and dice sweet potatoes and place into a medium size pot with a tight fitting lid, add garlic to pot. Bring to a boil and cook until fork tender; 8 minutes

2. Drain potatoes, add greek yogurt, salt and pepper to taste and mash with a potato masher OR for extra creamy mashed sweet potatoes use a rotary beater.

Asparagus:

1. Snap the woody ends off the asparagus, place in a pan and cover with water, salt the water and then cover and bring to a boil steaming until fork tender (about 5 minutes)

2. Drain, add 1 tablespoon of coconut oil or butter, pepper, and lemon juice and toss to coat

Maple Glaze:

1. Put 2 tablespoons of coconut oil or butter, maple syrup and lemon zest into a small pot and bring to a boil, allow to bubble until the mixture coats the back of a spoon. Set aside.

Salmon:

1. In a pan melt remaining 1 tablespoon of coconut oil or butter and heat

2. Once melted and add the salmon turning when the salmon no longer wants to stick to the pan

Serve it:

Place sweet potatoes, and asparagus on a plate

Top with Salmon and add Maple glaze over top the salmon, this glaze will compliment the sweet potatoes and the lemon in the asparagus nicely.

Homemade GF Beauty

Gluten-Free beauty products can be expensive and difficult to find and not always the most natural in their ingredients! So I have decided to share a few of my favourite beauty recipes that are 100% GF and will leave you feeling positively radiant!

Deep Cleanse Facial Scrub

You will need:
1 tablespoon of natural,unpasteurized honey (I use presidents choice, its also organic and inexpensive however if you want to go local check out Buzz Honey (https://www.facebook.com/buzzhoney for info on where to find them and their products)
1 tablespoon of gluten-free baking soda (I use bobs red mill brand (http://www.bobsredmill.com/)
3 tablespoons of plain yogurt

Mix all these ingredients in a bowl and get scrubbing for beautiful skin! The honey is naturally antibacterial, when coupled with the natural scrubbing power of baking soda it banishes acne the clean way!

Gluten Free Hot Oil Conditioner

Simply warm coconut oil for 2-3 minutes in the microwave (I buy mine at costco for $17.99/54 ounces making it super cost effective for use in beauty http://www.carringtonfarms.com/organic-extra-virgin-coconut-oil-12-oz-tub-54-oz-bottle/
Massage into hair and scalp and leave in for 15 minutes or up to over night for truly unruly hair. Be sure to rinse thoroughly and enjoy gluten free tame hair.

Gluten Free All Natural Body Polish

Take 5-6 medium sized strawberries, 1/2 cup of sugar, 1 tbs. of olive oil
Mash strawberries with sugar and olive oil, rub over any rough areas (knees, elbows, feet, legs) and rinse with water.
*ensure sugar is gluten-free (check cross for contamination)

Moisturizing Bath Oil 

Take 3 tablespoons of coconut oil and 5-10 drops of any one of your favourite essential oils (I love eucalyptus or lavender) and add to hot running bath water, stirring the water until the coconut oil is melted.
