Classic Fluffy Gluten-Free Waffles


2 cups of guten-free all purpose flour

3 teaspoons of baking powder

3/4 teaspoon of salt

2 tablespoons of sugar

1 teaspoon of xanthan gum

3 eggs, separated

1 3/4 cups of milk

1/2 cup of vegetable oil

Make it:

1. Sift flour with baking powder, salt, and sugar; place in a mixing bowl

2. Beat egg yolks until frothy; stir in milk and oil. Pour into flour mixture; beat with a electric beater until smooth

3. Beat egg whites until stiff peaks form; fold into the batter

4. Pour batter onto a hot, lightly greased waffle iron cooking to manufacturers instructions or until golden brown.

4. Serve with fresh strawberries, maple syrup or whipped cream.
