Apple Month

It is apple month and there are some amazing celiac/gluten friendly appletizers (see what I did there?) and apple dinners and desserts and breakfasts that will be sure to knock your socks off this February.

Lets start off with breakfast and check out our German Apple Pancakes 

Now to start off these can be made as individuals in a 6 cup muffin tin OR in one oven safe skillet or round baking dish.

Ingredients

2-3 large granny smith apples

4 tablespoons of butter or coconut oil

1/4 of brown sugar (be sure to check it is GF)

1 tablespoon of freshly squeezed lemon juice (you may also add about a 1/4 teaspoon of the zest for some added flavour)

1/2 teaspoon of ground cinnamon

2/3 of a cup of all-purpose gluten free flour (I like Cup 4 Cup for this recipe)

1 teaspoon of xanathan gum

1/2 teaspoon of salt

5 tablespoons of sugar or coconut palm sugar

3/4 cup of milk (or almond milk)

Make it

1. preheat your oven to 450º degrees and lightly grease your muffin tin or pan with butter or cooking spray

2. Prepare apples by peeling, coring and dicing into small cubes, then in a bowl toss with the lemon juice, cinnamon and brown sugar

3. Melt two tablespoons of butter or coconut oil in a skillet over medium heat, add the apples and stir until soft and caramelized about 10 minutes

4. Add the sauteed caramelized apples to the muffin tin or pan and spread out evenly

5. In a food processor add the flour, salt, sugar, the remaining two tablespoons of butter or coconut oil and the milk and blend the ingredients for 3-4 minutes until smooth

5. Pour the batter over the apples in the muffin tin or pan and put in the oven then reducing the heat to 400º baking the pancake until it puffs up about 15 minutes

6. Turn out onto a plate and dust with confectioners sugar for added sweetness
