Gluten Free Chinese Night

Fried Rice


1 cup of dry white basmati rice, 1 3/4 cup of water, 1 tbs. of coconut oil or butter

1 package of mushrooms, sliced

1/2 a pound of bacon, sliced (omit for vegetarian)

1/2 medium  sized red bell pepper, small dice

1/2 cup of frozen peas

3-4 tbs. of low sodium tamari (gluten free soy sauce)

Make it

1. Add rice, water and coconut oil to a rice cooker and cook according to manufacturers instructions

2. In a wok pan add sliced bacon on medium heat and fry until crisp, add bell pepper

3. Add cooked rice and frozen peas stir to heat through

4. Add soy sauce, stir to coat all the rice. Add more if needed

5. Serve

Sweet & Sour Pork


1 pound of pork tenderloin cut into cubes

for the batter:

1/4 cup of cornstarch

1 tbs.  of water

1 egg

To fry:

1 inch of oil in a heavy sauce pan

for the sweet and sour sauce:

1/3 cup of white vinegar

1/3 cup of brown sugar

1 tbs. of tamari (gluten free soy sauce)

1/4 cup of water and 3 tbs. of cornstarch (stir these two together before hand until thickened and combined)

Make it

1. Cut pork into bite site cubes

2. Combine cornstarch, water and egg in a bowl

3. Heat oil over medium-high heat, once oil is hot dredge the pork in the batter and add to the hot oil, frying until golden brown and crisp

4. Place cooked pork into plate with paper towel to drain

Sauce it up:

Combine vinegar, tamari, and brown sugar in a pot and heat over medium high heat add corn starch and water mixture, stir until thick and bubbling

serve pork with sauce, green onion and sesame seeds!
