Celiacs “gluten” Xanthan Gum

Xanthan is fabulous for all gluten free baking and it is actually a must have to avoid having crumbly baking that doesn’t stay together.
How much to use? Check out my guidelines for successful use of your xanthan gum!

Quantity of Xanthan Gum per 1 cup of flour:
1/4 teaspoon for cookies
1/2 teaspoon for cakes
3/4 teaspoon for muffins and quick bread
1-1 1/2 teaspoons for bread
2 teaspoons for pizza crusts
